Spinach / Purslane with Rice

Ingredients

  • 1 bunch of spinach (approx. 500 g)
  • 1 medium onion
  • 1 teaspoon pepper paste
  • 1 teaspoon tomato paste
  • 2 tablespoons rice
  • 2 cups hot water
  • Salt
  • Vegetable oil
  • Description

    Pour some vegetable oil into a pot and sauté the finely chopped onion.

    When the onions turn translucent, add the tomato and pepper pastes and sauté until fragrant.

    Then, add the chopped spinach, followed by the washed rice and salt.

    Close the lid of the pot. Once the spinach has wilted and lost its volume, add the hot water and stir.

    Turn down the heat. Simmer on low heat until the rice is fully cooked.
