Poached Mackarel with Leeks in Cream Sauce

Ingredients (for 6)

  • 4 mackerel (300 g each)
  • 1/2 litre white wine
  • 4 leeks (white parts only)
  • 100 g low-fat creme fraiche
  • 1 tablespoon chopped parsley
  • Olive oil
  • Salt, pepper
  • Description

    Clean the mackerel. Heat the white wine and poach the mackerel in it for 5 minutes.

    Wash the leeks and slice thinly. Fry in 2 tablespoons olive oil, then add a little white wine, cover and simmer for 5 minutes.

    Add the créme fraiche, salt and pepper just before removing from the heat. Serve the fish decorated with chopped parsley and garnished with leeks.
