Bean Pilaki

Ingredients

  • 2 cups dried beans (white, or borlotti, or red kidney)
  • 1 large potato
  • 1 large carrot
  • 1 onion
  • 1 large grated tomato
  • 3-4 tbsp olive oil
  • 1 tsp tomato paste
  • 1 tsp salt
  • 1 tsp sugar
  • Description

  • Place the beans in a pot, add enough water to cover them, bring to a boil, and immediately turn off the heat. Let them soak like this for one hour. After one hour, drain the water and set the beans aside.
  • Put the olive oil in a separate pot and sauté the finely chopped onion.
  • Add the tomato paste and sauté until its aroma is released.
  • Add the diced potatoes and carrots, and sauté over low heat for about 5 minutes.
  • Add the grated tomato and sauté for another 5 minutes.
  • Add the beans and enough water to cover them by about two fingers' width, then add the salt.
  • Cook until the beans, potatoes, and carrots are tender.
  • Remove from heat and add the sugar.
  • Serve cold.
  • You can garnish with parsley and lemon during service.
