Artichoke with Peas

Description

  • Let's start by adding olive oil into a deep frying pan and turning the heat to medium
  • Once the oil is hot add diced tomato and sauté for about 5 minutes, stirring from time to time
  • Add diced carrot and sauté for 3 more minutes
  • Now add the garlic and sauté for 1 minute, while stirring constantly
  • Add green peas and combine well
  • Time to add the artichokes-spread them evenly on top of the peas
  • Add the water
  • Season with chopped dill and salt
  • Bring it to boil and cover the pan
  • Switch the heat to low and simmer for 45 minutes
  • If you prefer a thicker sauce, remember to uncover the pan during the last 10 minutes of cooking
  • Serve sprinkled with some ground black pepper and drizzled with a few drops of freshly squeezed lemon juice and fresh olive oil
