Artichoke with Peas
Description
Let's start by adding olive oil into a deep frying pan and turning the heat to medium
Once the oil is hot add diced tomato and sauté for about 5 minutes, stirring from time to time
Add diced carrot and sauté for 3 more minutes
Now add the garlic and sauté for 1 minute, while stirring constantly
Add green peas and combine well
Time to add the artichokes-spread them evenly on top of the peas
Add the water
Season with chopped dill and salt
Bring it to boil and cover the pan
Switch the heat to low and simmer for 45 minutes
If you prefer a thicker sauce, remember to uncover the pan during the last 10 minutes of cooking
Serve sprinkled with some ground black pepper and drizzled with a few drops of freshly squeezed lemon juice and fresh olive oil
